Nutritional Tip

 Sweet Potatoes are packed with essential vitamins and minerals that nurture the body to replenish and heal itself, making this a superfood for those with Adrenal issues.

They are an excellent source Vitamin A , Vitamin B and Niacin which we know assists with depression and anxiety..

​Organic raw cacao is full of anti oxidents and magnesium for healthy brain function.

Ingredients

3 cups grated sweet potato
½ cup melted coconut oil
½ cup raw cacao powder
2½ tablespoon coconut flour

⅓ cup honey
2 vanilla beans
1 teaspoon baking powder
1 teaspoon baking soda
2 eggs
​A pinch of love

Method

Preheat oven to 180°C
Combine grated sweet potato, eggs, honey and coconut oil in a large bowl
Add in vanilla bean seeds, raw cacao, baking powder and baking soda
Add coconut flour and mix through
Pour the mixture into a lined square cake tin
Bake for 25-30 minutes

To serve

Allow to cool for 10 minutes
Remove from tin and cut into squares
Top with whipped coconut cream and raspberries
