Sweet Potato and Zucchini Fritters

Nutritional Tip

Ingredients

Zucchini and Sweet Potatoes are an excellent source of Vitamin C, which protects your body from free radicals and aids in nerve cell communication which is great for those with mitochondrial issues.

Sweet Potatoes contain vitamin D, Iron and help to support the immune system.  They are also contain magnesium which is the relaxation and anti-stress mineral.  great for managing cortisol imbalances and adrenal stress.

Food made with Love has more nutritional value and heals the body
1 cup zucchini grated
1 cup sweet potato grated
1/2 cup red onion diced
2 eggs
1 handful fresh herbs chopped
​1 tbsp coconut oil
A dash of Love

Method

Grate zucchini and sweet potato into a bowl
Squeeze all the moisture out of the grated vegetables and place in new bowl
Add in diced onion, fresh herbs and eggs and mix together
Heat oil in a pan
Spoon mixture into pan
​Cook 5-6 minutes each side, until golden brown

To serve

Serve with a salad for lunch or dinner
Or
With salsa and avocado which makes for a great Sunday Brunch
