Miso Mushroom Soup with Seaweed Noodles

Nutritional Tip

Ingredients

Mushrooms are high in Selenium. Selenium is a mineral that helps to detoxify the body and aids in inflammations, it can also help regulate Thyroid hormones T3 and T4.. Mushrooms also contain Vitamin D which is essential for mood and energy.

Miso is a fermented soy product full of minerals and antioxidants. Fermented products contain healthy bacteria for improved gut health and digestion which is great for
​Leaky Gut Syndrome.

Food made with love has more nutritional value and heals
​the body.
1 tbsp organic miso paste
1 cup brocolini
1 spring onion
1 cup mixed mushrooms
​1 tsp grated ginger
1/2 cup seaweed noodles
OR nori sheets cut into strips
​2 cups boiling water

Method

Roughly chop broccolini, mushrooms and spring onoins and place into a glass jar
Add in the miso paste and grated ginger
Add in seaweed noodles or nori strips
Fill with boiling water
Stir the mixture well, mixing in the paste
Place lid on jar and leave to steep for 4-5 minutes until vegetables are soft

To serve

Pour ingredients into a bowl or use the jar
If taking this to work for lunch, leave out the boiling water until you are ready to serve
