2 Ingredient Pancakes with Cinnamon

Ingredients

Eggs are one of the healthiest foods on the planet, not only are they a great source of protein, they are also high in B vitamins, Selenium and Vitamin D which
is great for our immune system, thyroid and
​depleted adrenals.
2 eggs
1 banana mashed
​1 tsp coconut oil
Cinnamon
Yoghurt and Strawberries to serve
​Sprinkle of love

Method

Whisk the eggs in a bowl, then add in mashed banana and mix together
Heat coconut oil in a pan, add the pancake mixture
Cook for a few minutes each side until golden brown

To serve

Top with fresh strawberries and yoghurt
Sprinkle with cinnamon

I love cinnamon. It's nostalgic for me. It reminds me of the bakeshop in town where my mother used to take me when I was in grade school. I am thirty five now and my mother is turning seventy. God I miss her. Maybe I should visit her but she is really a difficult person to understand. I am not sure if she want to see me or get rid of me. She looks at me as if I am a failure and I think for her it's depressing to see me. We have a different definition of success. It's frustrating. I am sure you all know how some mothers can be pessimistic.
